Description

This wine has been called “extinct” by sommeliers as it’s dangerous to produce (grapes are sealed in a barrel to ferment which essentially makes a bomb) and usually results in a lot of loss up to 90% due to reductive and biological stresses. But it was the 10% that made it through this gamut that was approved by King Charles of France in the 1300’s as it tasted like a “Beaujolais supérieur” – darker, richer and more ‘fruit forward’ resembling a berry compote of raspberries, blueberries, strawberries and blackberries in a glass. Dry and delicious, this wine is rare and very hard to find as most winery vintners will not allow their winemakers to produce it!
