Potter Settlement’s award-winning Marquette and Cabernet Franc blended with 1/3rd Merlot from British Columbia and Shiraz from Niagara; these sourced grapes were sold overpriced to Potter Settlement as they were the finest wines from their respective wineries. Blended together as a ‘revenge wine’ Sauvage was created to show the world that we can, indeed, make superior red wines in Canada. It is aptly named “Sauvage” – French for the word “Savage” – as our proprietor was insulted during a dinner in Monte Carlo’s Alain Ducasse Michelin Restaurant in 2007 when the Sommelier told him that ‘Canada’s wine must only be fit for the savages.’ It has a luscious palate of black figs, candied dates, damson plum and American tobacco. Balanced acidity and aged 10% in Chattanooga, Tennessee American Oak the final result is a wine that will undoubtedly steal the finest gold medals from France. How savage is that?
